¡á Phytate is a strong polyanionic chelator that forms insoluble complexes with several divalent cations (such as Ca2+, Mg2+, Zn2+, Cu2+, Fe2+, Mn2+) and proteins & amino acids. It is nearly indigestible for monogastric animals (swine and poultry).
Phytases (EC 3.1.3.28) decompose phytate, which is the primary storage form of phosphate and inositol in plants ( > 60% of total phosphorus).
